Ingredients

  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the sauce:
    • 1/2 cup mayonnaise
    • 2 tablespoons sriracha
    • 1 tablespoon honey
    • 1 teaspoon garlic powder
    • 1 teaspoon lime juice

Instructions

  1. Cook the rice according to package instructions. Set aside once ready.
  2. Cut chicken into bite-sized pieces. Season with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Add chicken and sauté for 6-8 minutes until golden brown.
  4. Mix sauce ingredients in a small bowl: mayonnaise, sriracha, honey, garlic powder, and lime juice.
  5. Add mixed veggies to the skillet. Cook for 2-3 minutes until tender.
  6. Remove skillet from heat. Pour sauce over chicken and veggies. Stir to coat evenly.
  7. Serve over rice and garnish as desired.
