Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup almond milk
- 1/3 cup vegetable oil
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- Zest of 1 lemon
- 1/2 cup vegan lemon curd
Instructions
- Preheat oven to 350°F (175°C). Grease a cake pan.
- Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
- Add almond milk, oil, vinegar, vanilla, and lemon zest. Stir until smooth.
- Pour half the batter into the pan. Spread lemon curd evenly over it.
- Top with remaining batter. Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool before serving.

- Use fresh lemon zest for best flavor.
- Check cake at 30 minutes to avoid over-baking.
