Description

A delicious and healthy black bean veggie quesadilla packed with flavor and nutrients.


Ingredients

Scale
  • 1 cup black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 whole wheat tortillas
  • 1 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced onion and bell pepper, cook until soft (3-4 minutes).
  3. Stir in black beans, cumin, chili powder, salt, and pepper. Cook for 2 minutes.
  4. Place tortilla on a clean surface, sprinkle cheese on one half.
  5. Add veggie mixture on top of cheese, then fold tortilla in half.
  6. Cook quesadilla in a pan over medium heat for 2-3 minutes per side until golden brown.
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges and serve warm.
