Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 1 tbsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a bowl, mix mashed bananas, melted butter, sugar, egg, and vanilla.
  3. Add baking soda, salt, and flour. Stir until just combined.
  4. In a small bowl, mix brown sugar and cinnamon.
  5. Pour half the batter into the loaf pan. Sprinkle half the cinnamon sugar mixture over it.
  6. Add remaining batter and top with the rest of the cinnamon sugar.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool before slicing.
