A creamy pasta salad with fresh vegetables, perfect for summer meals.
Ingredients

- 8 oz pasta (rotini or penne)
- 1 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, mix mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and pepper.
- Add cooked pasta, tomatoes, cucumber, red onion, and parsley to the bowl.
- Toss gently until all ingredients are coated evenly.
- Chill for at least 1 hour before serving.
Notes
- For extra flavor, add crumbled feta or shredded cheddar.
- Store leftovers in the fridge for up to 3 days.
- Substitute Greek yogurt for sour cream if preferred.
