Description

Ingredients

  • 8 oz pasta (rotini or penne)
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, mix mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and pepper.
  3. Add cooked pasta, tomatoes, cucumber, red onion, and parsley to the bowl.
  4. Toss gently until all ingredients are coated evenly.
  5. Chill for at least 1 hour before serving.
