- 12 oz linguine
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cook linguine according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2 minutes per side until pink. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Stir in sun-dried tomatoes and spinach, cooking until spinach wilts.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted.
- Season with Italian seasoning, salt, pepper, and red pepper flakes.
- Return shrimp to the skillet and toss with the sauce.
- Add cooked linguine and toss to coat evenly. Serve hot.
