Ingredients

- 2 medium cucumbers, thinly sliced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and slice the cucumbers, bell peppers, and red onion.
- In a large bowl, combine cucumbers, bell peppers, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
- Pour the dressing over the salad and toss gently to coat.
- Chill in the refrigerator for 15 minutes before serving.
Notes
- For extra flavor, add crumbled feta cheese.
- Adjust honey and lemon juice to taste.
