A flavorful and healthy detox soup with Southwest-inspired ingredients to cleanse and nourish your body.
Ingredients

- 1 tbsp olive oil
- 1 lb boneless chicken breast, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 4 cups low-sodium chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup frozen corn
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned, about 5 minutes.
- Add onion, garlic, bell pepper, and jalapeño. Sauté for 3 minutes.
- Stir in cumin, chili powder, and paprika.
- Pour in chicken broth, black beans, diced tomatoes, and corn.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove from heat and stir in lime juice and cilantro.
- Season with salt and pepper.
- Serve hot.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For extra spice, leave the seeds in the jalapeño.
- Serve with avocado slices for added creaminess.
