Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless chicken breast, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup frozen corn
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add onion, garlic, bell pepper, and jalapeño. Sauté for 3 minutes.
  4. Stir in cumin, chili powder, and paprika.
  5. Pour in chicken broth, black beans, diced tomatoes, and corn.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Remove from heat and stir in lime juice and cilantro.
  8. Season with salt and pepper.
  9. Serve hot.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For extra spice, leave the seeds in the jalapeño.
