Description
A simple and hearty cabbage roll soup that captures all the flavors of traditional cabbage rolls in an easy-to-make soup.

- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 small cabbage, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 cup cooked rice
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add onion and garlic, cook until softened.
- Stir in cabbage, tomatoes, beef broth, rice, paprika, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Add more broth if you prefer a thinner soup.
