Ingredients

- 1 cup rolled oats
- 1/2 cup grated carrots
- 1/4 cup raisins
- 1/4 cup chopped walnuts
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/4 cup melted butter
- 1 egg
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix oats, flour, cinnamon, baking powder, and salt in a bowl.
- In another bowl, whisk egg, melted butter, and brown sugar.
- Combine wet and dry ingredients.
- Fold in grated carrots, raisins, and walnuts.
- Scoop dough onto a baking sheet.
- Bake for 12-15 minutes.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- Substitute walnuts with pecans if preferred.
