A simple and delicious low-carb chicken casserole that’s perfect for a healthy weeknight dinner.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cauliflower, chopped
- 1/2 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix shredded chicken and chopped cauliflower.
- Add heavy cream, cheddar cheese, garlic powder, onion powder, salt, and black pepper. Stir well.
- Grease a baking dish with olive oil.
- Spread the mixture evenly in the dish.
- Sprinkle Parmesan cheese on top.
- Bake for 25 minutes or until golden brown.
- Let it cool for 5 minutes before serving.
Notes
- Use rotisserie chicken for quicker prep.
- Swap cauliflower with broccoli for variation.
- Store leftovers in an airtight container for up to 3 days.
