Description

A simple and quick one-pot creamy tomato pasta dish that’s rich in flavor and easy to prepare.


Ingredients

  • 8 oz (225g) pasta
  • 1 can (14 oz/400g) diced tomatoes
  • 1 cup (240ml) heavy cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup (50g) grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft, about 3 minutes.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in diced tomatoes, heavy cream, basil, oregano, salt, black pepper, and red pepper flakes. Stir to combine.
  5. Add the pasta and enough water to just cover the pasta (about 2 cups).
  6. Bring to a boil, then reduce heat to low and simmer for 12-15 minutes, stirring occasionally, until pasta is cooked and sauce thickens.
  7. Stir in Parmesan cheese until melted.
  8. Garnish with fresh basil leaves before serving.

Notes

  • Use any pasta shape you prefer.
  • Adjust the amount of red pepper flakes for desired spiciness.
  • For a lighter version, substitute half-and-half for heavy cream.
  • Store leftovers in an airtight container for up to 3 days.
