Ingredients

- 1 cup white rice
- 2 cups water
- 2 tbsp olive oil
- 1 lemon (juiced)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 clove garlic (minced)
- 1/4 cup fresh parsley (chopped)
Instructions
- Rinse the rice under cold water.
- Heat olive oil in a pot over medium heat.
- Add garlic and sauté for 1 minute.
- Add rice and stir for 2 minutes.
- Pour in water, lemon juice, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 15 minutes or until rice is tender.
- Fluff rice with a fork and mix in parsley.
