- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1 teaspoon salt
- 8 ounces pasta (fusilli or penne recommended)
- 4 cups beef or vegetable broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 cup grated Gruyère cheese
- 1/4 cup Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced onions, sugar, and salt. Cook, stirring occasionally, until caramelized (about 20-25 minutes).
- Add uncooked pasta, broth, Worcestershire sauce, and thyme to the pot. Stir well.
- Bring to a boil, then reduce heat to low. Cover and simmer for 10-12 minutes or until pasta is cooked.
- Remove from heat. Stir in Gruyère and Parmesan cheese until melted.
- Garnish with fresh parsley if desired and serve hot.
Notes
- For a vegetarian version, use vegetable broth.
- Caramelizing onions takes time—don’t rush it for the best flavor.
- Add a splash of white wine for extra depth (optional).
