Ingredients

  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 8 ounces pasta (fusilli or penne recommended)
  • 4 cups beef or vegetable broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced onions, sugar, and salt. Cook, stirring occasionally, until caramelized (about 20-25 minutes).
  2. Add uncooked pasta, broth, Worcestershire sauce, and thyme to the pot. Stir well.
  3. Bring to a boil, then reduce heat to low. Cover and simmer for 10-12 minutes or until pasta is cooked.
  4. Remove from heat. Stir in Gruyère and Parmesan cheese until melted.
  5. Garnish with fresh parsley if desired and serve hot.

  • For a vegetarian version, use vegetable broth.
