Description

Ingredients

  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice

Instructions

  1. Cook pasta according to package instructions. Drain, reserving 1/2 cup pasta water.
  2. Melt butter in a large skillet over medium heat.
  3. Add garlic and red pepper flakes. Cook for 1 minute until fragrant.
  4. Add shrimp and cook for 2-3 minutes per side until pink.
  5. Stir in cooked pasta, reserved pasta water, salt, and pepper.
  6. Toss to combine and cook for 1 more minute.
  7. Remove from heat and stir in parsley, Parmesan, and lemon juice.
  8. Serve immediately.

Notes

  • For extra flavor, use chicken or vegetable broth instead of pasta water.
  • Add chopped cherry tomatoes or spinach for more veggies.
