- 4 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 jalapeño, seeded and minced
- 1 lime, juiced
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Grill or roast corn until lightly charred. Let cool slightly.
- In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
- Add corn, cotija cheese, cilantro, and jalapeño. Toss to combine.
- Season with salt and pepper to taste.
