Ingredients

- 1 cup cottage cheese
- 1/4 cup Greek yogurt
- 1/2 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions
- In a large bowl, combine shredded chicken, cottage cheese, and Greek yogurt.
- Add celery, red onion, lemon juice, and Dijon mustard. Mix well.
- Season with salt and pepper to taste.
- Fold in fresh parsley.
- Chill for at least 30 minutes before serving.
