Description

A delicious and creamy casserole inspired by Mexican street corn, perfect for any gathering.


Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 2 cloves garlic, minced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix corn, mayonnaise, sour cream, cotija cheese, chili powder, paprika, cayenne pepper, garlic, cilantro, lime juice, salt, and pepper.
  3. Transfer the mixture to a greased baking dish.
  4. Bake for 20-25 minutes until bubbly and golden.
  5. Garnish with extra cotija cheese and cilantro before serving.

Notes

  • Use fresh corn for best flavor, but frozen works well too.
  • If cotija cheese is unavailable, feta cheese makes a good substitute.
  • Adjust spices to taste for more or less heat.
