A delicious and creamy casserole inspired by Mexican street corn, perfect for any gathering.
Ingredients

- 4 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 2 cloves garlic, minced
- 1/4 cup chopped cilantro
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix corn, mayonnaise, sour cream, cotija cheese, chili powder, paprika, cayenne pepper, garlic, cilantro, lime juice, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Bake for 20-25 minutes until bubbly and golden.
- Garnish with extra cotija cheese and cilantro before serving.
Notes
- Use fresh corn for best flavor, but frozen works well too.
- If cotija cheese is unavailable, feta cheese makes a good substitute.
- Adjust spices to taste for more or less heat.
