A comforting and easy-to-make creamy vegetable soup cooked in one pot for minimal cleanup.
Ingredients

- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 potatoes, diced
- 1 cup frozen peas
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in vegetable broth and bring to a boil.
- Add potatoes and simmer for 15 minutes.
- Stir in heavy cream and frozen peas.
- Cook for 5 more minutes.
- Season with salt and pepper.
- Serve hot.
