Description

A simple one-pot dish with mushrooms and rice cooked in a savory soy sauce base.


Ingredients

  • 1 cup white rice
  • 2 cups water or vegetable broth
  • 200g mushrooms, sliced
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat vegetable oil in a pot over medium heat.
  2. Add onions, garlic, and ginger. Sauté for 2 minutes.
  3. Add mushrooms and cook until softened (about 5 minutes).
  4. Stir in rice and toast for 1 minute.
  5. Pour in water or broth and soy sauce. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
  7. Turn off heat and let it sit covered for 5 minutes.
  8. Fluff rice with a fork and drizzle with sesame oil.
  9. Garnish with green onions if desired.
