Ingredients

- 1 cup white rice
- 2 cups water or vegetable broth
- 200g mushrooms, sliced
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- Heat vegetable oil in a pot over medium heat.
- Add onions, garlic, and ginger. Sauté for 2 minutes.
- Add mushrooms and cook until softened (about 5 minutes).
- Stir in rice and toast for 1 minute.
- Pour in water or broth and soy sauce. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
- Turn off heat and let it sit covered for 5 minutes.
- Fluff rice with a fork and drizzle with sesame oil.
- Garnish with green onions if desired.
