A refreshing and easy-to-make pasta salad perfect for picnics, potlucks, or a quick meal.
Ingredients

- 8 oz pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, and olives.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour dressing over the pasta mixture and toss to combine.
- Sprinkle feta cheese on top before serving.
Notes
- Chill for at least 1 hour before serving for best flavor.
- Add grilled chicken or shrimp for extra protein.
- Store leftovers in an airtight container for up to 3 days.
