A creamy and flavorful Tuscan-inspired pasta dish featuring tender chicken, sun-dried tomatoes, spinach, and a rich garlic parmesan sauce.

- 2 boneless, skinless chicken breasts
- 8 oz penne pasta
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 cup spinach
- 1/3 cup sun-dried tomatoes
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken with salt, pepper, and Italian seasoning. Cook in olive oil until golden (5-7 mins per side). Remove and slice.
- In the same pan, sauté garlic until fragrant (30 secs). Add sun-dried tomatoes and spinach. Cook until spinach wilts.
- Pour in heavy cream and parmesan. Simmer until sauce thickens (3-4 mins).
- Return chicken and pasta to the pan. Toss to coat evenly. Serve hot.
Notes
- Substitute half-and-half for lighter version
- Add red pepper flakes for heat
- Fresh basil garnish recommended
