A delicious vegan dessert combining the flavors of apple crumble and cheesecake.
Ingredients

- 2 cups raw cashews (soaked overnight)
- 1 cup dates (pitted)
- 1 cup walnuts
- 2 apples (peeled and diced)
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
- 1/4 cup coconut oil
- 1/4 cup lemon juice
Instructions
- Blend dates and walnuts in a food processor until sticky.
- Press mixture into a cake tin to form the base.
- Blend soaked cashews, maple syrup, coconut oil, lemon juice, and vanilla until smooth.
- Pour half the mixture over the base.
- Sauté apples with cinnamon and nutmeg until soft.
- Layer apples over the cheesecake mixture.
- Pour remaining cheesecake mixture on top.
- Freeze for 4 hours before serving.
Notes
- Soak cashews overnight for best texture.
- Use a springform pan for easy removal.
- Thaw slightly before serving for creamy texture.
