Description

A delicious vegan dessert combining the flavors of apple crumble and cheesecake.


Ingredients

Scale
  • 2 cups raw cashews (soaked overnight)
  • 1 cup dates (pitted)
  • 1 cup walnuts
  • 2 apples (peeled and diced)
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/4 cup coconut oil
  • 1/4 cup lemon juice

Instructions

  1. Blend dates and walnuts in a food processor until sticky.
  2. Press mixture into a cake tin to form the base.
  3. Blend soaked cashews, maple syrup, coconut oil, lemon juice, and vanilla until smooth.
  4. Pour half the mixture over the base.
  5. Sauté apples with cinnamon and nutmeg until soft.
  6. Layer apples over the cheesecake mixture.
  7. Pour remaining cheesecake mixture on top.
  8. Freeze for 4 hours before serving.
