- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1 3/4 cups gluten-free flour blend
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 cup almond milk
Instructions
- Preheat oven to 350°F and grease a loaf pan.
- In a bowl, mix mashed bananas, coconut oil, maple syrup, and vanilla.
- Add gluten-free flour, baking soda, salt, and cinnamon. Stir well.
- Pour in almond milk and mix until smooth.
- Transfer batter to the loaf pan and bake for 50-55 minutes.
- Let cool before slicing.
Notes
- Use very ripe bananas for the best flavor.
- Check doneness with a toothpick—it should come out clean.
- Store leftovers in an airtight container for up to 3 days.
