- 1 lb ground turkey
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups low-sodium chicken broth
- 1 can diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups chopped spinach
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground turkey and cook until browned.
- Add onion, carrots, celery, and garlic. Cook for 5 minutes.
- Pour in chicken broth and diced tomatoes.
- Add thyme, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in spinach and cook for 2 more minutes.
- Serve hot.

- Use lean ground turkey for best results.
- Add other vegetables like zucchini or kale if desired.
- Store leftovers in the fridge for up to 3 days.
